Basic Commercial Kitchen Layouts

Commercial kitchens have different layouts. Pine Heights serves them all!

Commercial kitchens come in all shapes and sizes. After all, there are many industries that use them. Whether you run a school, a restaurant, a hospital, or a church, you will likely see one of these basic commercial kitchen layouts. Pine Heights Commercial Kitchen Service, Inc., is here to give you a lay of the land. If you need commercial kitchen maintenance or repair services, we are here for you in Maryland.

Galley Kitchens

Galley kitchens are best fit for small kitchens. You will typically see food preparation equipment lined along one or both sides of the kitchen in a way that makes the production the most efficient.

Island Kitchens

Island kitchens are traditional for larger commercial kitchens. The food equipment will form an island in the center of the room with storage facilities along the perimeter. Once again, the ordering of the given equipment will make the layout more or less efficient.

Zoned Kitchens

Zoned kitchens have both food preparation equipment in the center and along the walls. A zoned kitchen layout is also decent for larger commercial kitchens. You might have zones for storage, different types of food preparation, and plating or packaging.

Ghost Kitchens

Ghost kitchens are those that only function for take-out or catered orders. There is no connection to a seating area for customers. They are usually compact and highly practical for high-production orders.

Fast Food Kitchens

Similarly, fast food kitchen layouts have multiple cooking stations to achieve multiple orders fast. They might use the galley or zoned kitchen layouts. The plating and packaging area will be closer to the front so that one can pass them along to customers as quickly as possible.

Assembly Line Kitchens

Assembly line kitchens are designed for the mass production of a limited menu. Chipotle or Five Guys’ commercial kitchens are good examples of assembly line kitchens. Employees can produce the food in an orderly, hygienic manner within minutes.

Open Kitchens

Open kitchens can have any of the above formats, save for ghost kitchens. They specifically allow customers to watch the cooking or meal preparation process. The food equipment would be arranged in the most efficient way for both parties.
